Knowledge about varieties and technologies is thus passed on from generation to generation.


Harvesting is done on a staggered basis by getting only the bigger roots first and leaving the smaller ones in the ground to mature.


Farmers use a wooden or bamboo stick for harvesting so as not to damage the immature roots.
